Ditch your boring bowl of porridge for breakfast and replace it with this superfood.

Beat the season blues with yummy and nutritious blueberries. Though they are small, they pack a lot of nutritional punch into one little bite. Often labeled a superfood, they are low in calories and incredibly good for you. For all those fitness freaks, load up yourself with these magical berries as they are also a key to a flat tummy. Here are a few delicious recipes of these cool blueberries that can be incorporated for healthy and fun berry experimentation.

 

 

 

INGREDIENTS

3 1/2cups frozen blueberries, 1/3 cup granulated sugar, 2 teaspoon lemon zest, 2 tablespoons lemon juice, 6 slices white sandwich bread, honey flavored Greek yogurt, blackberries for garnish.

 

INGREDIENTS

In a saucepan, combine blueberries with sugar, lemon zest, lemon juice and bring to a boil.  Cook until berries begin to let of their juices, for about 3 minutes. Reserve the juice. Dip each slice of bread into reserved juice, after rolling them flat. Line the bowl with 5 pieces of bread overlapping slightly. Press edges together so that there are no gaps. Pour in sweet fruit. Cover the top with remaining piece of bread. Press down firmly. Wrap the top with plastic wrap. Then press down. Place the small plate on the top and weigh it down with a large can of beans of tomatoes. Refrigerate until pudding is firm, at least for 40 minutes. Remove the plate and can from a refrigerator. Turn the pudding upside down onto a serving dish. Garnish with blueberries and blackberries. Slice and serve it with yogurt.

 

 

INGREDIENTS

1 cup fresh blueberries, 5 medium strawberries, ¼ onion, I teaspoon lime zest, juice of 2 lemons, 1/3 cup fresh cilantro leaves, ½ chopped avocado, salt, and pepper.

 

INGREDIENTS

Combine blueberries, lime zest, lemon juice, strawberries, cilantro leaves, onion in a blender. Pulse it 5-6 times. Taste and add salt and pepper if desired. Scrape it in a bowl and fold in chopped avocado. You can serve it with pita or corn chips.

 

 

INGREDIENTS

3-5 peeled diced peaches, 1 cup fresh blueberries, 1 cup bottled peach nectar of juice, I tablespoon sugar.

 

INGREDIENTS

Place 10 pop sticks in a bowl of warm water. Combine 1 cup peaches and blueberries. Loosely chop together. Then mix peaches nectar, sugar and blend them together till they become smooth. Pour juice on the fruit to fill the pop molds. Poke the fruit with a bamboo skewer or thin knife a few times to release any air bubbles. Place the lid on top and insert damp pop sticks. Place mold in a freezer and freeze for 8-10hours.

 

 

 

INGREDIENTS

3 cups of fresh blueberries, ½ cup water, 2 tablespoons of honey, 1 teaspoon lemon zest, 2 tablespoons fresh lemon juice, 1/8 teaspoon salt.

 

INGREDIENTS

Place all the ingredients in a food processor, process until smooth. Freeze this in the freezer for about an hour. Take it out 10 minutes before serving.

 

 

INGREDIENTS

1 cup diced watermelon, ½ cup fresh blueberries, ½ cup diced cucumber, 5 fresh and chopped mint leaves, I lemon’s juice, and chips for serving.

 

INGREDIENTS

Toss all the ingredients together in a bowl. Mix well and serve it with ragi chips.
